No Bake Cookies

I had a friend from CrossFit All In give me some cacao that she got when she was in Europe, and she asked me to make something yummy with it!  It is darker than the cacao mass I am used to working with, but really delicious!  In case you want to try finding some on the internet, here is a picture of the bar.

These cookies that I made with the chocolate are always good, but they were much richer with this European pure chocolate!  Thank you Heather!

No Bake Chocolate Cookies (makes 18 cookies)

1/2 cup unsweetened shredded coconut
2 cups pure cacao mass, chopped
1/2 cup pitted, finely chopped dates
1/4 cup chopped pecans or almonds
1/4 cup almond butter
3 Tbsp raw honey
1 tsp vanilla
1/8 tsp ground cinnamon

Line a cookie sheet or platter (one that will fit in the refrigerator) with parchment or wax paper.  Toast the coconut in a small skillet over medium heat.  Stir it around until it starts to brown.  Remove from heat.

In a double boiler, melt the chocolate. (Do NOT allow the water to boil!  It will scorch the chocolate!)  Once it is completely melted, add the rest of the ingredients (don't forget the toasted coconut!) and mix until well blended.

Drop by spoonfuls onto the prepared cookie sheet and refrigerate for about 15 minutes.  Enjoy!

  1. Oh, great idea! I will definitly be playing with this recipe... No-Bakes were my go-to comfort prior to Paleo! Would you mind if I link to your blog as my inspiration when I try these? I'm enjoying your blog... we seem to have similar stories/backgrounds, and I love seeing fellow Seattle area Paleo people!

    Nothing fancy, but similarly to you, I had so many friends constantly asking for this recipe and how I did that. it just came about as a place to compile them.
