Quick and Easy Ham Muffins

Most of the people in my life do not enjoy spending hours in the kitchen making a single meal.  I spend almost all day in the kitchen :)  I truly love cooking and baking.  Whenever I get bored, I usually end up in the kitchen making some kind of tasty treat.  My friend Kristi from CrossFit All In shared a sausage biscuit recipe with us.  I changed a few things and ended up with a super moist and delicious muffin!  Thanks Kristi for the inspiration!


Quick and Easy Ham Muffins (makes 9 muffins)

7 oz deli ham, chopped (no nitrates, nitrites, or sugar!) - I use Applegate Farms ham
1 1/2 c almond flour
3/4 c canned coconut milk
3 eggs
3/4 tsp sea salt
3/4 tsp baking soda

Preheat oven to 425 degrees.  Prepare muffin tin with paper liners. Mix all ingredients together and fill muffin cups about half way with batter.  Bake at 425 for 12 to 15 minutes.  Enjoy!
