Sweet Potato Chips

I make sweet potato fries at least once a week for my kids.  They are easy and the kids gobble them up!  I decided to change it up a bit and see how chips would turn out.  They were a huge hit, and my kids request them consistently now!


Sweet Potato Chips

2 large sweet potatoes
1 cup olive oil
sea salt

Peel and thinly slice the sweet potatoes.  Heat oil in a large skillet over medium high heat.  Arrange a handful of the sliced potatoes in the oil, being careful not to overlap because they WILL stick together.  Allow to cook until the underside is light brown.  Turn over and cook the other side.  Remove from pan and place on paper towels to drain and sprinkle with sea salt.  Enjoy!

  1. I make the chips for my babies as well & they love them. I use a mandolin for slicing them & it saves a ton of time and they turn out super thin! My kids like them done in the pastured butter I buy versus the oil though...just a thought.

  2. Jay- I want a mandolin...it will make the job MUCH easier! And butter...yum! I've cut out all dairy because my tummy doesn't like it, but I'm sure it is so yummy!
